If you want the whole weekend-brunch ritual, start here. Spring has two Toasted Yolks: one at 2211 Rayford Road just east of I-45, and one at 6705 Grand Parkway. Both typically open at 7 a.m. and close at 3 p.m. every day, and both list a full bar, a patio and a welcome for kids.

Order an "Arnold," the cafe's own take on eggs Benedict: poached eggs, Canadian bacon and hollandaise on a fresh-baked biscuit. The hashbrown casserole is the side that tends to steal the table, and the brisket tacos and shrimp and grits cover the savory crowd. At the bar there's a build-your-own Bloody Mary bar and mimosa flights.

Insider tip: The Toasted Yolk doesn't take reservations, but you can join the digital waitlist from your phone before you leave the house. On a Sunday, that's the whole game. Want your dog along? The cafe says patio dog policies vary by location, so call ahead.

Best for: birthday brunches, out-of-town parents and big groups.

Thistle Draftshop

Thistle is three things at once: a restaurant, a craft beer bar and a bottle shop. Its site says it typically opens at 10 a.m. on Saturdays and Sundays for brunch, and at 9 a.m. on weekdays for breakfast. The regular menu leans gastropub, with a BELT (bacon, fried egg, lettuce and tomato on a croissant), Nashville-style fried chicken sandwiches, beer-braised brats and a charcuterie board built with Houston Dairymaids cheeses.

Insider tip: Thistle calls itself "the home of HotTub Beers," its own label, so ask what's pouring. You can also leave with a bottle or two from the shop.

Best for: brunch with friends who would rather have a pint than a mimosa.

The cheap and cheerful brunch

Fatima's Pupusas and Tacos

FM 2920 (77388) · Salvadoran and Mexican · open daily from 10 a.m.

Fatima's lists its breakfast menu as "desayuno, breakfast all day," which makes it the easiest late riser's brunch in Spring. The plates are generous and cheap: Los 3 Mosqueteros pairs a pupusa with fried plantains, beans, queso fresco and Salvadoran cream, and the Desayuno Completo adds eggs, Salvadoran sausage, avocado and handmade tortillas. Chilaquiles, tamales and breakfast tacos round it out.

Insider tip: Add a loroco con queso pupusa to the table. Loroco is an edible flower bud used across Central America, and the menu lists it with cheese.

Kolache Factory (Spring)

Not every brunch needs a table. The Spring Kolache Factory typically opens at 6 a.m. Monday through Saturday and 7 a.m. on Sunday, closes at 2 p.m., and has a drive-thru. Grab a sausage and cheese kolache and a bag of the cinnamon twists, which the company says are made fresh every morning.

La Madeleine (Spring)

Grand Parkway (77389) · French café · open daily from 7 a.m.

La Madeleine's Spring café sits at 6805 N. Grand Parkway, on the same stretch of road as the Grand Parkway Toasted Yolk. It typically opens at 7 a.m. every day and its location page lists a patio, free Wi-Fi and grab-and-go. It's a calmer choice than a full-service brunch room, good for a quiet table and a long conversation.

Insider tip: If the Toasted Yolk waitlist is long, this is your nearby backup.

Best for: a low-key brunch for two, or a working breakfast.

Chef's Providence

Old Town Spring, 417 Gentry St. (77373) · French bakery

This family-run bakery brings French pastries, breads, savory bakes and coffee to Old Town. The Old Town Spring location typically opens 8 a.m. to 4 p.m. Tuesday through Friday and 9 a.m. to 4 p.m. on Saturday.

Insider tip: Chef's Providence is closed on Sundays and Mondays, so this is a Saturday brunch, not a Sunday one. Find it in the cul-de-sac off Gentry Street, behind The Doll Hospital.

Best for: a croissant before you shop Old Town.

Trilogy Brew

Old Town Spring, 417 Gentry St. (77373) · coffee, beer and wine bar

Trilogy Brew pours coffee, craft beer and wine, and has a separate waffle menu. The name is a hint: the coffee list includes a dirty chai called the Chaibacca, a salted caramel mocha called the Rivendell and a white mocha coconut drink called Wampa Juice.

Best for: sci-fi fans, and anyone who wants coffee and a waffle. It shares a Gentry Street address with Chef's Providence.

The Old Town Sunday lunch

Wunsche Bros. Café & Saloon

Old Town Spring, 103 Midway St. (77373) · Texas café · Sundays from 11 a.m.

Wunsche Bros. isn't a brunch menu, it's better: chicken-fried steak at 11 on a Sunday in a building that opened in 1902. The café says it began as a hotel, brothel and saloon for railroad workers, built with lumber from the Wunsche family mill. It's a Texas Historical Landmark, and when a fire broke out in 2015 the original saloon survived. Order the homemade beer bread with honey butter, then the chicken-fried steak or the whiskey cake.

The "I didn't know that": look closely at the phone number. One of the café's listed lines is 281-350-1902, the year it opened. The café also says, on its own website, that the old saloon is haunted.

Best for: visitors, history fans and anyone who believes brunch is just a big lunch with a better excuse.

Lynn's Table

Old Town Spring, 307 Gentry St. (77373) · chef-owned bistro and dessert parlor

Lynn's Table is a chef-owned bistro serving scratch-made comfort food, with a dessert parlor for fresh fudge and handcrafted ice cream. Lunch typically runs 11 a.m. to 5 p.m. on Sundays, and the restaurant takes reservations through its site.

Insider tip: Lynn's lists no Monday hours. Old Town's own directory keeps a separate "Open on Mondays" list, a good hint that plenty of the district takes that day off.

Best for: a slow Sunday lunch that ends at the ice cream counter.
