The BBQ was delicious. The service was friendly. Although this is a food trailer, the outdoor seating made it feel more inviting. Beware, the recipes have a cajun flair so sides like mac n cheese may be a bit spicier than you anticipate. Don't worry though, this place is BYOB. So bring some "cold ones" to knock down the heat, or pick some up at the gas station next door.

Just east of the Hardy Toll Road on Cypresswood in Spring sits an orange food trailer. At first look you might not think much of Paw Paw Chico Barbecue. But once you try their barbecue, you will likely go back again and again - partly for the smoked meat, and partly for how kind and friendly Loise, the pitmaster, is to her customers. She showed us around the pit behind the trailer, and shared some great stories about the importance of family. She is self-trained at managing the pit, and she and her significant other have been running this trailer for over 3 years now. The pit is a wood-fired rotisserie pit, using only hickory. I ordered brisket and spicy jalapeno sausage. And my barbecue buddy, Craig, had a similar order, but with creole sausage. I ordered the creole mac-n-cheese as a side, and Craig ordered the beans. That would have been plenty for us. But Miss Loise was so good to us - she loaded us up. We both got both types of sausage and her signature creole mac-n-cheese and beans, as well as some really tasty turkey and pork spareribs. She really took care of us. The brisket had great flavor and a very nice bark. The fat was well rendered. Getting to try both the spicy jalapeno and the creole sausage was wonderful. Both were very tasty, with a good grind, an excellent snap to the casing, and not oversmoked. The turkey was a real treat - a "pulled" turkey rather than sliced. It was moist and flavorful. The pork spareribs use a dry rub only. They do not get a wet rub or mop. They had a great color and bark. And the flavor was outstanding. The beans had a great taste, with a healthy amount of meat. The creole mac-n-cheese was outstanding - the creole flavors and ingredients were really blended well. If you haven't had the opportunity to head up north and try Paw Paw Chico Barbecue, you may just want to consider it. And if you are in the area already, definitely stop on by. And tell Miss Loise I said to say hello.

Amazing! A Food Truck with the most delicious bbq, Cajun macaroni n cheese, beans with extra mmmm! I am telling you. Drive the extra miles to Spring it is worth it! Paw Paw perfected the food and the family shares it. This lady worked her heart into making our plates and you can tell! It was beautiful. We saw several people drive up to come eat and knew we made the right choice. So I had to make this review. Look at this food. I love Bbq!!

Small place. In a truck right next to a liquor store lays paw paw Chico BBQ. Service was great, food was good. Very nice portions. I especially liked the corn on the cob. And the source was pretty darn good as well. Will definitely go back next time visiting Texas!

Highly recommend! We hired this food truck for The Woodlands Township Muddy Trails 5K. The food and service was approved and beyond wonderful! Extremely professional and showed up early to set up. Best BBQ in Texas! Thank you for your exceptional service!
