How we chose
We included only butcher shops and meat markets with a working counter you can visit, a clear specialty, and hours confirmed on an official website or location listing as of October 2026. We left out shops that have closed — Revival Market (closed July 2022), Rice Epicurean (closed 2022) — and any locations we could not confirm as currently operating.
Specialty butchers: dry-aged beef and Wagyu
B&W Meat Company
4801 N Shepherd Dr · Oak Forest / North Houston · since 1959
B&W has been on North Shepherd for more than 60 years, and it has a very specific superpower: the fajita cut. The shop is where generations of Houston cooks have come for skirt steak before a cookout, and the staff know exactly how to cut it. That is the everyday visit. The more surprising reason to go is the wild game counter — B&W processes deer and other wild game for hunters in the Houston area, which puts it in a completely different category from most urban butchers in the country.
In-house sausages are made on-site, and the staff can accommodate custom cuts. Hours are typically Monday through Friday 9 a.m.–7 p.m., Saturday 8 a.m.–7 p.m., Sunday 9 a.m.–5 p.m.; check bwmeatcompany.com before a holiday visit.
Best for: Fajita-cut beef, in-house sausages, wild game processing (deer).
R-C Ranch Texas Craft Butchers
2520 Airline Dr · Houston Farmers Market · Wednesday–Sunday
R-C Ranch raises American Wagyu on its own 2,800-acre operation in Brazoria County, about 45 minutes south of downtown Houston. The ranch runs its own butcher shop at the Houston Farmers Market, which means you can buy Wagyu that was raised, dry-aged, and cut by the same team. The 3,000-square-foot shop also carries in-house sausages and charcuterie. Hours are typically Wednesday through Sunday, 9 a.m.–6 p.m. More details on the market in our Houston Farmers Markets guide.
Best for: Texas Wagyu, dry-aged cuts, a traceable supply chain from a single Texas ranch.
B&B Butchers & Restaurant
1814 Washington Ave · Washington Corridor
B&B runs both an upscale steakhouse and a working butcher counter at the same address. The counter carries Japanese A5 Wagyu, Texas Wagyu, and in-house dry-aged USDA Prime, all hand-cut. If you are shopping for a special-occasion steak, ask the butchers what is in the dry-age room and how far along it is — the answer changes every few weeks. Full details on the restaurant side are in our B&B Butchers guide.
Best for: Japanese A5 Wagyu, dry-aged Prime, a steakhouse-quality butcher counter in the Washington Corridor.
Pete's Fine Meats & Deli
5509 Richmond Ave · Galleria / Uptown
Pete's has been a Galleria-area fixture for more than 50 years. It carries prime beef, pork, lamb, and poultry — nothing frozen — with custom cuts on request. The shop also does wild game processing and keeps a deli counter with house-made items. This is the neighborhood butcher for River Oaks and Galleria-area households who want a full-service shop. Check petes-fine-meats.com for current hours.
Best for: Full-service prime butcher, never-frozen cuts, custom orders, deli counter.
Carnicerias and fajita specialists
The Houston carniceria tradition goes back decades before sizzling-platter fajitas appeared on restaurant menus. The word fajita comes from faja (meaning belt or strip), referring to the skirt steak's shape — and Houston families have been buying marinated skirt steak from carnicerias and cooking it at home long before it became a restaurant staple. These two shops represent that tradition.
Guerrero Meat Market
Multiple Houston locations · open daily
Guerrero runs several locations across Houston, with the original on Winkler Drive in Southeast Houston and others in Northeast Houston and near Katy. The shop is best known for its marinated fajitas — skirt steak in a house garlic-citrus-chile marinade, ready to grill at home. Also look for barbacoa, carne asada, and fresh chorizo. Most locations open at 6:30 a.m. and close around 9 p.m.
Best for: Marinated fajita meat, barbacoa, carne asada — the carniceria that regulars drive across town for.
La Michoacana Meat Market
20+ Houston-area locations · hours vary by location
La Michoacana is a regional chain, but it consistently delivers authentic Michoacán-style marinated meats across its Houston locations. Look for pre-marinated fajitas, carnitas cut to order, and weekend specials. Notable locations include Sharpstown (Clarewood Dr), Spring Branch (Gessner Rd), and the East End (Wayside Dr). Hours vary by location — check the chain's site or call ahead.
Best for: Carnitas, marinated meats, and authentic Michoacán cuts with neighborhood convenience.
Halal meat markets
Houston has a large Muslim community, which supports a strong halal butcher market citywide. These are two of the most consistent options.
Phoenicia Specialty Foods
1001 Austin St, Downtown · also at 12141 Westheimer Rd
Phoenicia is primarily known as an international grocery, but its halal butcher counter is a serious operation. The store carries certified halal beef, lamb, and chicken alongside a wide selection of Middle Eastern, Mediterranean, and European imported products. If a recipe calls for fresh halal lamb shoulder, pomegranate molasses, and dried rose petals all at once, Phoenicia is the one-stop answer. Check phoeniciafoods.com for current hours.
Best for: Halal beef and lamb, international specialty groceries in one trip.
Ramadan Halal Meat Market
4750 Cypress Creek Pkwy · Northwest Houston
Ramadan Halal Meat Market is a dedicated halal butcher in Northwest Houston with a consistent reputation for freshness and a wide selection of beef, chicken, and lamb. Staff cut to order. If you need a specific cut — whole leg of lamb, short ribs, bone-in chuck — call ahead to confirm availability.
Best for: Dedicated halal cuts, Northwest Houston, fresh beef and lamb cut to order.
Worth the drive: 1836 Butchers (Pasadena)
7407 Spencer Hwy #160, Pasadena · Tuesday–Sunday
1836 Butchers opened in Pasadena in 2021 with a Texas-first approach: beef, pork, and poultry from Texas farms, plus in-house charcuterie and specialty sausages. The shop is typically open Tuesday through Friday, 10 a.m.–7 p.m., Saturday, 9 a.m.–6 p.m., and Sunday, 9 a.m.–3 p.m. It is about a 20-minute drive from downtown Houston. Check 1836butchers.com for the current schedule.
Best for: Artisan charcuterie, Texas-sourced beef and pork, a serious independent outside the Loop.
Brisket-buying tips for backyard pitmasters
If you are buying a whole packer brisket to smoke at home, here is what to look for:
- Grade and marbling. A USDA Choice packer at 14–16 lbs with good fat marbling beats a Select cut at any price. Ask to look at the flat before you buy — you want at least ¼ inch of fat cap and visible marbling throughout.
- Wagyu brisket. R-C Ranch and B&B Butchers both carry Wagyu brisket. The higher fat content renders slowly and produces a richer result, but the price is roughly double a standard Prime packer. Save it for a special cook.
- Buy the day before. A cold brisket takes an hour or more to reach around 40°F. Pick it up the night before so you are not waiting on the morning of the cook.
- Ask about trimming. Most butchers will trim the fat cap to about ¼ inch on request. That is the standard starting point for a backyard smoke.
Our Best BBQ in Houston guide has the full list of Houston pitmasters if you would rather let someone else do the cooking.
Save this: quick reference by need
- Backyard brisket smoke: R-C Ranch (Texas Wagyu) or Pete's Fine Meats (Prime packer)
- Fajita night at home: B&W Meat Company for raw skirt steak; Guerrero or La Michoacana for pre-marinated
- Halal dinner party: Phoenicia for one-stop shopping; Ramadan Halal for fresh cuts to order
- Wild game processing: B&W Meat Company — deer, alligator, rabbit, duck, and turtle
- Charcuterie board: 1836 Butchers (Pasadena) for in-house artisan selections

What is a carniceria, and what makes it different from a regular butcher?
A carniceria is a Mexican or Latin-style meat market specializing in fresh cuts for traditional recipes: marinated fajita meat, barbacoa, chorizo, and carne asada. The main difference from a traditional butcher is a house marinade program — you can buy skirt steak already seasoned for the grill. Guerrero Meat Market and La Michoacana Meat Market are the most established carnicerias in Houston.
